Size: Size can reach 190mm (7.5 inches) with most measuring 100mm or 4 inches long.

Source: This species is found in the cold waters of the southwest Atlantic from Brazil to Argentina. It is usually located at depths of 325 feet though many are caught in shallow water around 80 feet.

Description: Argentine Pink Shrimp are an important resource to Argentina. This species is similar to the North Atlantic Pink Shrimp but is much larger. Because of the many environmental requirements that the shrimp need to thrive, landings aren’t reaching their potential in most years. However, landings have reached 79,000 metric tons at times.

Not only are the landings restricted by the environment, but they are directly affected by the movement of the shrimp as well as the variability of the species.

Harvesting: This species is typically harvested between the months of September and March.

Flavor/Texture: This species is particularly well flavored. The flesh is soft.

Handling: Argentine Pink Shrimp must be handled with great care. If this shrimp is not processed immediately, it can spoil and soften at high rates. This shrimp can also develop a black spot (melanosis) as a result of spoilage. The packaging and processing has greatly improved over the past several years.

Preparation: Argentine Pink Shrimp require very gentle cooking as it can shrink considerably. If prepared correctly, this is an excellent shrimp with more flavor than higher-prices alternatives.
